Dark Chocolate Silky Mousse

Super soft and silky chocolate mousse with a good chocolate hit from dark chocolate and cocoa powder.

It's made from silken tofu which is rich in protein, vitamins and minerals as well as isoflavones which can mimic the effect of oestrogen. This property means tofu is used to help balance hormones and may reduce menopausal symptoms such as hot flushes. The dark chocolate provides a natural mood boost

Ingredients

 200 g dark chocolate
 350 g silken tofu
 1 tsp cocoa powder
 1 tsp vanilla extract
 3 tbsp maple syrup
 1 pinch of salt
 raspberries to serve

Directions

Break the chocolate into squares and melt over a simmering pan of water

Meanwhile, measure all other ingredients (except raspberries) into a food processor

Once the chocolate is melted and smooth tip into the food processor and blend until well mixed

Spoon into glasses or small serving dishes and top with raspberries and flaked almonds if you wish
