Halloween Chocolate Brownie Ghosts

This brownie recipe is gluten-free and if you use a dairy free dark chocolate it's dairy free too! It's rich and delicious! Adding plenty of walnuts to boost the protein and fibre makes these a fabulous Halloween Treat

Ingredients

For the brownies:
 6 tbsp coconut oil
 170 g dark chocolate (broken into squares)
 2 eggs
 120 g sugar
 20 g cocoa powder
 24 g cornflour
 ½ tsp salt
 1 handful of walnuts
For the ghosts:
 15 strawberries, washed and ends cut off
 150 g white chocolate
 Black writing icing

Directions

Preheat Oven to 170 oC (fan) and prepare a baking tray (around 20 x 20cm) by lining with parchment paper

Melt the coconut oil and dark chocolate gently in a small saucepan. Remove from the heat and allow to cool slightly

Mix the eggs and sugar (use a mixer if you have one) for around 2 minutes until smooth and pale. Add the melted chocolate mixture and well mix

Carefully add the cocoa powder, salt and cornflour until combined and batter is smooth and thick

Pour mixture into the prepared tin and bake for 20-25 minutes

Allow to cool completely before cutting into squares and adding ghosts!

To make ghosts melt white chocolate gently in microwave or over a pan of warm water.

Use a little white chocolate to the base of each strawberry and stick one to the centre of each brownie square

Use a spoon to cover each ghost wth white chocolate allowing it to spread over some of the brownie based

Allow to set. Cover with a second layer of white chocolate to cover up the red strawberry completely. Allow to set

Use black writing icing or an edible pen to draw spooky ghost faces!
