Sticky Asian Salmon

This speedy salmon dish is so delicious it could easily become a new 'go-to' weekday meal. Omega-3 fats found in salmon can help suppress inflammation. Combining this with rainbow coloured vegetables rich in antioxidants makes this an incredibly supportive meal for your immune system.

Ingredients

 2 salmon fillets
 1 dessertspoon of fish sauce
 1 dessertspoon of brown sugar
 juice of half a lime
 1 tbsp soy sauce
 1 tbsp sesame seeds
 1 bag of ready to cook stir fried vegetables
 1 big garlic clove, crushed
 1 thumb sized piece of ginger, grated
 2 tsp olive oil
 1 pouch of ready cooked whole grains

Directions

Pre-heat the oven to 180oC (fan)

Place salmon fillets into an oven-proof dish

Mix the soy, lime juice, fish sauce and sugar in a small bowl. Spoon over the fish fillets.

Season and cover with foil.

Cook for around 12 minutes then sprinkle with sesame seeds before serving

While the salmon is cooking heat the olive oil in a wok or large non-stick pan. Add the vegetables, garlic and ginger and cook, stirring for 4-5 minutes until cooked but crunchy.

Serve a lovely pile of vegetables alongside half a pouch of grains and your salmon. Enjoy!
