Stimulating Mocha Trail Mix

An incredible and stimulating treat to keep you feeling awake, alert and happy!

Find little bursts of chocolate and coffee amongst nutrient rich pecans, hazelnuts and raisins. Caffeine and chocolate both act as stimulants so help you feel awake, alert and happy.

Ingredients

To make chocolate covered coffee beans:
 100 g dark chocolate (70%+ cocoa solids)
 50 g coffee beans
Also:
 100 g hazelnuts
 50 g pecans
 50 g raisins (dried cherries would also be delicious)
 50 g dark chocolate chips or drops
 50 g pumpkin seeds

Directions

To make chocolate covered coffee beans:

Break the chocolate into squares and melt in a microwave (stirring every 30 seconds) or over a pan of simmering water

Whilst chocolate is melting, line a large tray with baking parchment

Tip the coffee beans into melted chocolate 1 tbsp at a time.

Stir well to ensure all beans are covered. Then using a fork, lift out a fork full at a time and allow chocolate to drip off

Plop coffee beans off the fork one at a time onto the lined tray.

Repeat this process until all coffee beans are covered with chocolate. If needed pop chocolate back into the microwave for 10 seconds to thin

Put tray in the fridge for at least 30 minutes until chocolate has set. Keep chocolate covered beans in a covered container in the fridge until needed.

To make trail mix

Heat oven to 190OC

Put nuts on a baking tray and roast for 5 minutes. Allow to cool

Combine 2 tbsp of the coffee beans with chocolate drops, nuts and raisins and keep in a glass jar

If making for children just use chocolate drops and leave out chocolate covered coffee beans due to caffeine content.
Tip: You can buy chocolate covered coffee beans to add to your trail mix if you prefer. Alternatively use coffee flavoured dark chocolate chopped into chunks.
