Very Chocolatey Brownies

Dark chocolate plus cacao powder means these brownies give double the antioxidant punch and health benefits such as improving brain function. Plus double the flavour!

Ingredients

 140 g dark chocolate
 90 ml coconut oil
 2 eggs
 130 g sugar
 2 tsp vanilla extract
 20 g cacao powder (or use cocoa powder)
 3 tbsp cornflour
  pinch of salt

Directions

Preheat the oven to 180C and line a 20 x 20cm baking tin with parchment paper

Gently melt the chocolate and coconut oil in a small saucepan, stirring

Allow to cool while you measure the remaining ingredients

Beat the eggs, sugar and vanilla until pale and smooth. Add the chocolate mixture and stir

Then add the cocoa powder, cornflour and salt and stir until well combined

Tip into the baking tin then bake for 25-30 minutes until set in the centre

Allow to cool then cut into squares
